He wanted to revive a six centuries old Chinese tradition that he had been exposed to during his childhood: handcrafted puffed candy. Thus, after several months of work and experimentation, Louis embarked on a new art form. Like a sculptor, using high quality sugar imported from Germany as his material, he creates small, bright and colourful figurines of fantastic chimeras. "Making sweets is not my job, I'm still an artist. They are like sculptures, you can keep them for at least ten years.».
